We're talking about a piece of meat here, not an insect. It's a muscle located in the bison's groin. Like the filet mignon, this cut is present in very small quantities per animal, hence its rarity. This cut is tender, slightly more marbled (as bison can be!), and its flavor is very pronounced. It's definitely a favorite among carnivores.
