Tournedos is a round, fairly thick cut of the fillet. This piece is very tender, just like the tenderloin, which is the end of the same piece. Boneless and fat-free, this cut has very fine fibers and a more delicate flavor.
It is usually found wrapped in lard or bacon, but in order to keep all the leanness of our pieces, we let you do it as you wish!
